Divine Special Tapas

Budget-friendly Tapas:

Tapas…..there’s something so special about tapas that keeps you attached to it especially when you are out for a drink with a group of friends. The influence is such that I have even come across tapas style Indian restaurants/bars in Glasgow. This made me try my own at home and here it is for your view.



This tapas recipe is super easy to prepare, budget-friendly that is packed with full of flavours as well as nutrients. Just in case you are new to it, Tapas offers a wide variety of small portion of dishes in spanish cuisine especially served along with alcoholic drinks which is absolutely perfect for get together and dinner parties. Of late it has evolved into a universal cuisine across the world where they enjoy their own version of tiny-appetizers. Lets get on with our homemade delicious tapas now!!

Serves: 2 to 3

Ingredients for Garlic infused roasted sweet potatoes

  • 2 medium-sized sweet potatoes
  • 1 tsp fresh ginger and garlic paste
  • 2 tsp paprika powder (as per your taste)
  • Required amount of salt
  • 2 tbsp olive oil

Ingredients for Egg muffin cups

  • 1 cup diced potatoes
  • 1 small cup green peas
  • 1 medium sized chopped onions
  • 1 tbsp hot chilli sauce/1 tbsp chilli powder
  • 1/2 tsp fennel seeds
  • half a cup chopped coriandar/curled parsely leaves
  • 3 0r 4 eggs
  • Required amount of salt
  • Butter/vegetable oil

Ingredients for cheese stuffed peppers

  • 1 Red/yellow pepper
  • half a cup cheddar cheese
  • Salad/cherry tomatoes sliced into half
  • Few chopped spinach leaves

Ingredients for garlic chilli mushrooms

  • 250g baby mushrooms, washed and sliced
  • Red chilli flakes
  • 2 fresh garlic cloves, finely chopped
  • 1 tbsp olive oil
  • Required amount of salt


  1. Preheat the oven to 190c .
  2. Roasted potatoes preparation – Cut the potatoes into wedges shapes. In a large bowl,  mix all the ingredients until fully incorporated together.
  3. Spread over the flavoured potato wedges onto the baking tray.
  4. Egg muffin cups perparation – Drizzle some oil in a skillet over medium heat add fennel seeds, onions, green peas, potatoes and chilli powder, saute for a few minutes. Meanwhile  beat the eggs until the yolks and white are well combined, now add in the vegetables mixture and mix well together. Grease a muffin tray with butter/vegetable oil and spoon the egg mixture into each muffin case.
  5. Cheese stufffed pepper preparation – cut the pepper into half and discard the seeds and pith, lay it on a baking tray.  Place 1 sliced tomato in each pepper half and fill it with few chopped spinach leaves and cheese.
  6. Pop in all the trays into oven and cook for about 20 minutes.
  7. Garlic chilli mushrooms – Meanwhile get on with mushrooms. Place a large skillet over a medium heat and add in the oil. Throw in garlic and chiilli flakes, saute for a minute or so and then add in the mushrooms and salt. As you all know, mushrooms release water when sauted. Cook until the water has evapourated. Take it off the heat and garnish with fresh parsely/coriandar leaves
  8.  Yummy tapas is ready to serve.

    Yep! Going to try the sweet potatoes and egg cups for make ahead meals! I’ve tried a lot of other egg cups that have been less then spectacular, but these look damn good.
