Horse gram is a small round shaped reddish brown pulse which is commonly consumed in southern states of India. As many of you wouldn’t be aware of this “miracle legume”, I just wanted to share some nutritional values and the medicinal properties of Horse gram. This bean is an excellent source of protein, Iron and calcium, also it has the highest source of calcium among pulses and it is one of the richest vegetarian sources of protein.

Health benefits
Weight loss – Regular intake of horse gram will help to reduce weight as it has the ability to dissolve fat tissues.
Diabetes – Consuming this legume is beneficial for diabetic patients as it reduces the insulin resistance on your body.
Other Benefits – Treating kidney stones, lower the blood pressure, control the menstrual problems, etc..

Healthy horsegram chutney

Serves 4 to 5

Ingredients

  • 250g Horse gram (soaked for 4 to 5 hours)
  • 1 small onion, diced
  • 4 green chillies, slitted
  • 1 dried redchills
  • 1 tomato, diced
  • 1 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 1/2 tsp turmeric powder
  • 2 garlic pods
  • 1 sprig curry
  •  leaves (optional)
  • A sprig of coriander leaves, chopped (optional)
  • Required amount of salt

Preparation

1. Drain the soaked water from dhal and transfer it to the pressure cooker/deep saucepan

2. Add in the remaining ingredients (except salt and coriander leaves) and 3 glasses of water.  Bring it to 5 to 6 whistles and let it cool down.

3. Drain the water and throw in dhal to food processor and blend into smooth paste.

4. Transfer it to the bowl and add in coconut oil or ghee. Mix well together and check for salt

5. Serve with basmati rice or naan bread.

Tips

As drained excess water also has lots of nutrients, we can have as a soup adding some crushed pepper and salt.

  4. There are a few small Indian stores here in South Florida. Perhaps they will have some
    Horse gram. The recipe sounds delicious!
